Job Title: F&B Purchasing Specialist Shift: Varies Location: Talking Stick Resort Department: Food & Beverage Reports To: Quality Assurance Chef Summary The F&B Purchasing Specialist supports procurement, receiving, and inventory functions for a high-volume casino resort operation. This role ensures uninterrupted product availability across restaurants, bars, lounges, banquets, and special events while maintaining quality standards, regulatory compliance, vendor performance, and cost controls. The specialist works closely with Culinary, Warehouse, Finance, and Operations teams to support a 24/7 guest experience. Supervisory Responsibilities This job has no supervisory responsibilities. Essential Duties and Responsibilities include the following. Other duties may be assigned. Procurement & Vendor Coordination •    Manage purchase orders and product transfers based on operational demand, inventory levels, forecasts, and banquet events. •    Coordinate with vendors regarding pricing, lead times, shortages, substitutions, credits, and emergency orders. •    Maintain accurate item, vendor, and pricing information within purchasing systems. •    Support sourcing initiatives, contract compliance, and cost-saving efforts. Receiving & Quality Assurance •    Coordinate receiving schedules and delivery priorities. •    Verify products meet approved specifications, quality standards, and purchase order requirements. •    Partner with Culinary, QA, and Receiving teams to inspect products and resolve discrepancies. •    Process credits, returns, and corrective actions for damaged, shorted, or out-of-spec products. Inventory & Financial Controls •    Support inventory management, invoice reconciliation, and month-end inventory processes. •    Monitor inventory levels, usage trends, and high-value products. •    Coordinate internal transfers and assist in identifying inventory risks, shortages, and overstock situations. Compliance & Operational Support •    Maintain purchasing records, reports, and documentation. •    Ensure compliance with HACCP, food safety regulations, internal controls, and audit requirements. •    Support menu rollouts, promotions, entertainment events, banquets, and VIP experiences through effective planning and communication. Education and/or Experience: High School Diploma or GED required. Three or more years of experience in food & beverage purchasing, receiving, inventory control or culinary operations required. Experience supporting banquet forecasting, multi-outlet operations, and large -scale events; casino, resort, hotel, or other high-volume hospitality experience preferred. ServSafe Manager Certification or equivalent preferred. Other Qualifications: •    Knowledge of food product specifications, vendor management, and inventory practices. •    Experience with purchasing systems and Microsoft Excel. •    Must be reliable, trustworthy and possess a pleasant personality. •    Must have excellent customer service, communication skills, organizational skills, and problem-solving skills. •    Understanding of HACCP and food safety principles. •    Complies with all policies and procedures. •    Ability to work harmoniously with others and be a team player. •    Ability to handle pressure and difficult situations. •    Presents a professional and well-groomed appearance at all times. •    Must be able and willing to work a flexible schedule, including weekends, evenings and holidays.
